For the filling, I take a different approach than traditional French Silk Pie. but you can make your way. I mostly fill it by combining vegan cream cheese, coconut cream, maple syrup, and dark chocolate chips.
You first need to put the combination of cream/syrup in a blender or food processor until creamy. Then spread the mixture over top of the gluten-free graham cracker crust.
To make the chocolate filling for this recipe (You can use Jam, Caramel Drizzle, Blueberries jam, etc) melt some dairy-free butter with dark chocolate chips either in a double boiler or in the microwave. Once melted, mix in cornstarch, cold water, and maple syrup until it’s nice and thick. Now spread this mixture over top of the vegan cream cheese layer you made before.
Whipping The Cream
Finally, whip up some coconut whipped cream using coconut cream to top off your Gluten Free French Silk Pie. Refrigerate until serving and enjoy!
